A Few Favourites from Life on the Road

Swedish Hotcakes-from Grandma Ida Carlson
​3 eggs

1/4/ cup sugar

1 1/2 cups Flour

1/2 Teasp. Salt

2 1/2 cups Milk

Put eggs & sugar into blender, mix briefly then add other 3 ingredients & blend only until all ingredients are mixed. Let stand  10-12 minutes at room temperature or overnight. 

Heat to medium hot a heavy frying pan or whatever frying pan is available, spray with Pam.  Using a I/3 cup measuring cup, dip cup into batter, pour into pan, lift pan to spread batter to edges of pan. Cook until all steam stops coming from batter; then tip pan & flip pancake. Cook  briefly & remove from pan.
